  • 1/2 cup sour cream
  • 1 cup frozen chopped spinach, thawed and drained
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Let cream cheese soften on the counter.
  2. Thaw frozen spinach in the microwave for 2 minutes, then squeeze out all excess water using a clean kitchen towel.
  3. Drain and rinse artichoke hearts, pat dry, and chop into nickel-sized pieces.
  4. In a mixing bowl, combine softened cream cheese and sour cream until smooth.
  5. Fold in drained spinach, chopped artichoke hearts, and 3/4 cup of shredded mozzarella. Reserve 1/4 cup for topping.
  6. Spoon the mixture into a greased 8×8 inch baking dish and spread evenly. Sprinkle reserved mozzarella on top.
  7. Bake for 20-25 minutes until bubbly and golden brown. For a deeper golden top, broil for 1-2 minutes at the end.
  8. Let rest for 5 minutes before serving. Serve warm with tortilla chips, bread, crackers, or vegetables.

Squeeze spinach thoroughly to prevent watery dip. Let cream cheese come to room temperature for smooth mixing. Can be assembled up to 24 hours ahead and refrigerated before baking. For a dairy-free version, use vegan cream cheese, sour cream, and mozzarella.
