  • 1 ½ teaspoons baking powder

  • 2 teaspoons pumpkin pie spice

  • 1 cup canned pumpkin puree
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 2 large eggs, room temperature
  • ⅓ cup vegetable oil
  • ½ cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 ½ cups powdered sugar, sifted
  • 3 tablespoons pure maple syrup
  • 12 tablespoons milk
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your donut pan with non-stick spray or melted butter.
  2. In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
  3. In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, buttermilk, and vanilla extract until smooth.
  4. Add the dry ingredients to the wet mixture. Use a rubber spatula to gently fold together until just combined. Do not overmix.
  5. Transfer the batter to a piping bag or a zip-top bag with the corner snipped off. Pipe the batter into each donut cavity, filling them about ¾ full.
  6. Bake for 10-12 minutes, or until the donuts are golden brown and a toothpick inserted into the thickest part comes out clean.
  7. Let the donuts cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  8. While the donuts are cooling, make the glaze. In a small bowl, whisk together the sifted powdered sugar, maple syrup, and 1 tablespoon of milk. Add more milk, one teaspoon at a time, until you reach a thick but pourable consistency. Add a tiny pinch of salt.
  9. Once the donuts are completely cool, dip the top of each donut into the glaze. Let the excess drip off, then place them back on the wire rack. For extra glaze, dip a second time after the first layer sets.
  10. Allow the glaze to set for about 15-20 minutes before serving.

Don’t overmix the batter to avoid dense donuts. Room temperature ingredients help create a smoother batter. Use a piping bag for neat cavities. Check your oven temperature with an oven thermometer. Let the glaze set properly before stacking. For gluten-free, use a 1:1 gluten-free baking blend. For vegan, use flax eggs and plant-based milk with vinegar. Freeze unglazed donuts for up to 3 months.
