These crispy cinnamon sugar pumpkin seeds are sweet, crunchy, and have that warm cinnamon flavor that just feels like a cozy sweater for your taste buds. They are the perfect fall snack, made from simple ingredients and ready in about 30 minutes.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 tablespoon salt (for boiling water)

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Clean the pumpkin seeds: Place fresh pumpkin seeds in a colander and rinse under cold water, separating seeds from pulp. Pat dry with a kitchen towel.
  3. Parboil the seeds: Fill a medium saucepan with water and add 1 tablespoon of salt. Bring to a boil, then add the pumpkin seeds. Boil for 10 minutes.
  4. Drain and dry the seeds: Drain the seeds in a colander and spread them out on a clean kitchen towel. Pat them as dry as possible.
  5. Mix the coating: In a medium mixing bowl, combine melted butter, granulated sugar, ground cinnamon, vanilla extract, and salt. Stir until well combined.
  6. Toss the seeds: Add the dried pumpkin seeds to the bowl with the butter mixture. Use a spatula to toss until every seed is coated.
  7. Spread on the baking sheet: Pour the coated seeds onto the prepared baking sheet and spread them into a single, even layer.
  8. Roast the seeds: Bake for 20 to 25 minutes. Halfway through (at 10 to 12 minutes), stir the seeds with a spatula for even browning.
  9. Check for doneness: The seeds are done when golden brown and fragrant. They will still be slightly soft but will crisp up as they cool.
  10. Cool completely: Let the seeds cool on the baking sheet for at least 15 to 20 minutes before serving.

Notes

Parboiling the seeds is key for crispiness. Dry seeds thoroughly before coating. Let seeds cool completely for maximum crunch. Store in an airtight container at room temperature for up to 2 weeks.
