  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 2 large eggs, at room temperature
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups shredded zucchini (about 1 medium zucchini, unpeeled—do not squeeze dry)
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. Wash the zucchini and trim off the ends. Using a box grater, shred it on the large holes to get about 1 ½ cups. Do NOT squeeze out the moisture.
  3. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  4. In a large bowl, whisk together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and well combined.
  5. Stir the shredded zucchini into the wet mixture.
  6. Pour the dry ingredients into the wet mixture. Fold gently with a rubber spatula until just combined (a few streaks of flour are okay).
  7. Fold in the chocolate chips, reserving a handful to sprinkle on top.
  8. Divide the batter evenly among the 12 muffin cups (they will be quite full). Sprinkle the reserved chocolate chips on top.
  9. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).
  10. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Do not squeeze the moisture out of the shredded zucchini—it’s key to the fudgy texture. Use room temperature eggs for better emulsification. Measure flour by spooning and leveling to avoid dry muffins. Let muffins cool completely before storing to maintain texture. For best results, use Dutch-processed cocoa powder for a richer chocolate flavor.
