  • ⅓ cup (75 g) unsalted butter, melted
  • ¾ cup (150 g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon (5 ml) vanilla extract
  • 1 ½ cups (190 g) all-purpose flour
  • 1 teaspoon (5 g) baking soda
  • ¼ teaspoon (1.5 g) salt
  • ½ cup (60 g) chopped walnuts, toasted
  • Optional: ¼ cup (30 g) chocolate chips
  • Optional: 1 tablespoon (15 g) brown sugar for topping
  • Optional: ½ teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving overhang on the two long sides.
  2. In a large bowl, mash the bananas with a fork until mostly smooth with some small chunks.
  3. Melt the butter and let it cool slightly. Pour over the mashed bananas.
  4. Add the sugar, egg, and vanilla extract to the banana mixture. Whisk until smooth and well combined.
  5. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  6. Pour the dry ingredients into the wet ingredients. Fold gently with a rubber spatula until just combined—do not overmix. A few lumps are fine.
  7. Fold in the toasted walnuts (and any optional add-ins like chocolate chips or cinnamon) with a few strokes.
  8. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan on the counter a few times to release air bubbles. Sprinkle brown sugar on top if using.
  9. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil for the last 15-20 minutes.
  10. Cool in the pan on a wire rack for 10 minutes. Then use the parchment overhang to lift the bread out and transfer to the rack to cool completely before slicing.

Use very ripe, heavily spotted bananas for the best flavor and moisture. Toast walnuts before adding for enhanced nuttiness. Do not overmix the batter to keep the bread tender. Let the bread cool completely before slicing to prevent crumbling. Store at room temperature wrapped tightly for up to 4 days, or freeze for up to 3 months.
