These spooky spider deviled eggs are the perfect Halloween appetizer—creamy, tangy, and topped with olive spiders that are surprisingly easy to make. A guaranteed crowd-pleaser that disappears from the table.

Ingredients

Scale
  • 6 large eggs (room temperature)
  • 3 tablespoons mayonnaise (Hellmann’s or Duke’s recommended)
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon white vinegar
  • 1/4 teaspoon fine sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon paprika (plus extra for garnish)
  • 6 large whole pitted black olives (jumbo if available)
  • 12 small black olive slices

Instructions

  1. Place eggs in a single layer in a saucepan and cover with cold water by about an inch. Bring to a rolling boil over high heat. Cover, turn off heat, and let sit for exactly 10 minutes.
  2. While eggs sit, prepare an ice bath. Transfer eggs to ice bath using a slotted spoon and cool for at least 5 minutes.
  3. Gently tap each egg to crack the shell, roll between palms, and peel starting from the wider end. Rinse under cold water to remove shell fragments.
  4. Slice each egg in half lengthwise with a sharp knife, wiping the knife clean between cuts. You should have 12 egg white halves.
  5. Gently pop yolks into a mixing bowl, keeping egg white halves intact.
  6. Add mayonnaise, yellow mustard, white vinegar, salt, and pepper to the yolks. Mash with a fork until completely smooth, about 2 minutes. Taste and adjust seasoning if needed.
  7. Spoon yolk mixture into a piping bag fitted with a star tip, or into a zip-top bag with a small corner snipped off (about 1/4 inch opening).
  8. Pipe filling into each egg white half, mounding slightly in the center.
  9. Slice whole black olives in half lengthwise to make 12 spider bodies.
  10. Cut small olive slices into thin strips about 1/8 inch wide (each slice yields 3-4 strips). Prep about 100 strips total.
  11. Place one olive half (cut side down) onto the center of each filled egg white. Gently press into the filling. Arrange 8 olive strips around each spider body—4 on each side—curving them slightly for a realistic look.
  12. Sprinkle a tiny pinch of paprika over the exposed filling around each spider.
  13. Refrigerate for at least 15 minutes before serving.

Notes

For easier peeling, add a teaspoon of baking soda to the boiling water. Use eggs that are at least a week old. If olive legs fall off, dab a tiny bit of yolk filling as glue. Can boil and peel eggs up to 2 days ahead. Assemble no more than 4 hours before serving for best presentation.
