  • 46 bone-in, skin-on chicken thighs (about 1.5 lbs or 680g)
  • 4 tablespoons (56g) unsalted butter
  • 68 cloves garlic, minced
  • 1 tablespoon (15ml) olive oil
  • 1/4 cup (60ml) chicken broth, low-sodium
  • 1 tablespoon (15ml) fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste (about 1 tsp salt and 1/2 tsp pepper)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prep the Chicken: Take chicken thighs out of the fridge about 15 minutes before cooking. Pat them very dry with paper towels. Season both sides generously with salt and black pepper.
  2. Heat the Pan: Place a large skillet over medium-high heat. Add olive oil and 1 tablespoon of butter. Let the butter melt and foam, but don’t let it brown.
  3. Sear the Chicken: Place chicken thighs skin-side down in the hot skillet. Cook undisturbed for 6-7 minutes until skin is deep golden brown and crispy. Flip and cook for another 5-6 minutes on the other side. Internal temperature should reach 165°F (74°C).
  4. Remove and Rest: Transfer cooked chicken to a plate and tent loosely with foil.
  5. Make the Garlic Butter Sauce: Reduce heat to medium-low. Add remaining 3 tablespoons of butter to the pan. Once melted, add minced garlic and stir constantly for about 30 seconds until fragrant.
  6. Deglaze the Pan: Pour in chicken broth and lemon juice. Scrape up browned bits from the bottom of the pan. Let simmer for 1-2 minutes until slightly thickened.
  7. Finish the Dish: Return chicken thighs to the skillet, skin-side up. Spoon garlic butter sauce over the top. Warm through for about a minute. Sprinkle with fresh parsley and red pepper flakes if using.
  8. Serve Immediately: Transfer to a serving platter or plates. Spoon remaining sauce over the top. Serve hot.

Notes

Pat chicken very dry for crispy skin. Don’t move chicken while searing to prevent sticking. Don’t burn the garlic—stir constantly and remove from heat after 30 seconds. For extra sauce, double the butter and garlic. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat with a splash of broth.
