These smoky chipotle chicken sliders are a full-on flavor punch packed into a soft, toasty bun. Perfect for parties, they feature tender shredded chicken in a smoky, slightly sweet chipotle sauce, topped with melted cheese and optional pickled onions.

  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 2 tablespoons adobo sauce (from the can)
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 tablespoons brown sugar
  • 1 cup low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 2 tablespoons apple cider vinegar
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 12 slider buns (brioche or potato rolls)
  • 4 tablespoons unsalted butter, melted
  • 1 cup shredded Monterey Jack cheese
  • Optional toppings: pickled jalapeños, fresh cilantro, thinly sliced red onion, or avocado-lime crema
  • For the Quick Pickled Onions (optional): 1 red onion, thinly sliced; 1/2 cup apple cider vinegar; 1/2 cup water; 1 tablespoon sugar; 1 teaspoon salt

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides generously with salt and black pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the chicken thighs in a single layer for 4-5 minutes per side until golden brown. Transfer to a plate and set aside.
  3. Reduce heat to medium. Add diced onion to the same skillet and cook for 3-4 minutes until softened. Add minced garlic, chopped chipotle peppers, smoked paprika, cumin, and oregano; stir for 30 seconds until fragrant.
  4. Stir in tomato paste and cook for 1 minute. Pour in chicken broth, adobo sauce, brown sugar, and apple cider vinegar. Stir to combine and bring to a gentle simmer.
  5. Return the seared chicken to the skillet, nestling into the sauce. Cover and simmer on low for 20-30 minutes (or transfer to a slow cooker and cook on low for 2-3 hours) until chicken is tender and shreds easily.
  6. Remove chicken from sauce and shred with two forks or a hand mixer. Return shredded chicken to the sauce and stir to coat. Adjust seasoning to taste.
  7. Preheat oven to 375°F (190°C). Split slider buns in half and arrange cut-side up on a baking sheet. Brush cut sides with melted butter. Toast for 4-5 minutes until lightly golden.
  8. Place bottom halves of toasted buns on a serving platter. Spoon chipotle chicken onto each bun using a slotted spoon. Top with shredded Monterey Jack cheese. If desired, return to warm oven for 2-3 minutes to melt cheese.
  9. Add optional toppings (pickled onions, cilantro, jalapeños) and close with top buns. Serve immediately.

Notes

Don’t skip searing the chicken—it adds deep flavor. Toast the buns to prevent sogginess. Chipotle heat varies; start with one pepper if sensitive. The sauce freezes well for up to 3 months.
