A quick and easy buffalo chicken dip that combines spicy hot sauce, creamy cream cheese, and tangy blue cheese crumbles for a crowd-pleasing appetizer perfect for game nights and gatherings.

  • 2 cups shredded cooked chicken (about 280 grams)
  • 8 ounces cream cheese, softened (225 grams)
  • ½ cup hot sauce (120 ml), Frank’s RedHot recommended
  • ½ cup blue cheese crumbles (75 grams), Maytag or similar
  • ½ cup ranch dressing (120 ml)
  • 1 cup shredded cheddar cheese (100 grams)
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened cream cheese and ranch dressing. Blend until smooth and creamy, about 2-3 minutes.
  3. Add the hot sauce, garlic powder, smoked paprika, salt, and pepper. Stir well to distribute the flavors evenly.
  4. Fold in the shredded chicken, shredded cheddar, and half of the blue cheese crumbles. Mix gently but thoroughly.
  5. Transfer the mixture to your baking dish, spreading it out into an even layer. Sprinkle the remaining blue cheese crumbles on top.
  6. Bake uncovered for 20-25 minutes until edges bubble and top is lightly golden. If cheese browns too fast, cover loosely with foil for the last 5 minutes.
  7. Remove from oven and let cool for 5 minutes before serving.

Notes

If dip feels too thick after baking, stir in a splash of milk or ranch dressing to loosen. Stirring halfway through baking is optional but helps heat distribute evenly. For a lighter version, substitute cream cheese with Greek yogurt. For dairy-free, use vegan cream cheese and blue cheese alternatives. Can be made in a slow cooker on low for 2 hours, stirring occasionally.
