A giant, indulgent chocolate chip cookie baked in a cast iron skillet, featuring crispy caramelized edges and a soft, gooey center. This easy dump-and-mix dessert is perfect for sharing and requires minimal prep time.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted and slightly cooled
  • 1 cup packed light brown sugar
  • ½ cup granulated white sugar
  • 2 large eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 2 cups semi-sweet chocolate chips
  • Flaky sea salt (optional, for topping)

Instructions

  1. Melt 1 cup of unsalted butter in a microwave-safe bowl or saucepan. Heat in 30-second intervals, stirring in between, until fully melted. Let it cool for about 5 minutes.
  2. In a large mixing bowl, combine 1 cup of packed light brown sugar and ½ cup of granulated white sugar. Pour in the cooled melted butter. Whisk vigorously for about 2 minutes until the mixture looks glossy and smooth.
  3. Crack in 2 large eggs and add 1 tablespoon of pure vanilla extract. Whisk again until everything is fully incorporated and the mixture looks uniform.
  4. In a separate bowl, whisk together 2 ¼ cups of all-purpose flour, 1 teaspoon of baking soda, and 1 teaspoon of salt.
  5. Gradually add the dry ingredients to the wet mixture. Switch to a rubber spatula and fold gently until just combined. Do not overmix.
  6. Pour in 2 cups of semi-sweet chocolate chips. Fold them in until evenly distributed. Reserve a handful of chips to sprinkle on top later.
  7. Preheat your oven to 350°F (175°C). Grease a 10-inch cast iron skillet with butter or non-stick spray. Spread the dough evenly into the skillet, pressing it down to reach the edges. Sprinkle reserved chocolate chips on top.
  8. Bake in the center of the oven for 20-25 minutes. The edges should be golden brown and crispy, while the center looks slightly underbaked and soft.
  9. Remove from the oven and let it cool in the pan for at least 10 minutes to allow the center to set. Sprinkle with flaky sea salt if desired. Serve warm.

Notes

For best results, use room temperature eggs to prevent the butter from seizing. Do not overbake; the center should look soft when removed from the oven as it will continue to cook from residual heat. For extra chewiness, chill the dough for 30 minutes before baking. Can be made gluten-free by using a 1:1 gluten-free flour blend or vegan by using vegan butter and chocolate chips.
