  • 1/2 cup (125g) creamy peanut butter
  • 1/2 cup (100g) granulated sugar, plus extra for rolling
  • 1/2 cup (110g) packed light brown sugar
  • 1 large egg, room temperature
  • 1 1/4 cups (155g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt (omit if using salted butter)
  • 1 teaspoon vanilla extract
  • About 36 Hershey’s Kisses, unwrapped

Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or silicone mats.
  2. Cream the butter, peanut butter, granulated sugar, and brown sugar in a large bowl using an electric mixer on medium speed for 2-3 minutes until light and fluffy.
  3. Add the egg and vanilla extract; beat until fully incorporated.
  4. Whisk together the flour, baking soda, and salt in a separate bowl. Slowly add to the wet ingredients and mix on low speed until just combined.
  5. Cover the dough and chill in the refrigerator for at least 30 minutes.
  6. Pour about 1/4 cup granulated sugar into a small bowl for rolling the dough balls.
  7. Roll dough into 1-inch balls using a teaspoon or cookie scoop, then roll each ball in the sugar until fully coated.
  8. Place dough balls about 2 inches apart on the prepared baking sheets.
  9. Bake for 8-10 minutes until edges are set but centers are still soft.
  10. Remove from oven and immediately press one unwrapped Hershey’s kiss into the center of each cookie, twisting slightly to secure.
  11. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chilling the dough is key to prevent spreading and achieve chewy texture. Use room temperature ingredients for best results. Press chocolate kisses into cookies immediately after baking while warm. If kisses are too firm, microwave for 5-10 seconds to soften.
