Classic Cozy Old-Fashioned Zucchini Bread

  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (120ml) vegetable oil
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups (150g) shredded zucchini, squeezed dry (about 1 medium zucchini)
  • Optional add-ins:
  • 1/2 cup (60g) chopped walnuts or pecans (toasted)
  • 1/2 cup (90g) mini chocolate chips
  • 1/4 cup (30g) shredded coconut

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Shred zucchini using large holes of a box grater. Wrap in a clean kitchen towel and squeeze out excess moisture. Set aside.
  3. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In a medium bowl, beat vegetable oil and sugar until combined. Add eggs one at a time, beating well after each. Stir in vanilla extract.
  5. Fold the squeezed zucchini into the wet ingredients.
  6. Pour wet ingredients into dry ingredients and fold gently until just combined. Do not overmix.
  7. Fold in optional mix-ins if using (nuts, chocolate chips, coconut).
  8. Pour batter into prepared loaf pan and smooth the top. Tap pan lightly to release air bubbles.
  9. Bake for 55-65 minutes, checking doneness with a toothpick starting at 55 minutes. Toothpick should come out clean or with a few moist crumbs.
  10. Cool bread in pan for 10-15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Squeeze out excess moisture from shredded zucchini to avoid soggy bread. Use room temperature eggs for better mixing. Fold batter gently to prevent toughness. Tent with foil if bread browns too quickly. Optional add-ins can be toasted nuts, chocolate chips, or shredded coconut. For gluten-free, substitute flour with a gluten-free blend. For vegan, use flax eggs and coconut oil.
