  • ½ tsp freshly ground black pepper

  • ⅓ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp apple cider vinegar
  • ½ tsp smoked paprika
  • Pinch of cayenne pepper (optional)
  • Salt and pepper to taste
  • 4 burger buns, toasted (brioche or potato buns work best)
  • 4 slices cheddar cheese
  • Fresh lettuce leaves
  • Tomato slices
  • Sliced red onion
  • Dill pickle slices

Instructions

  1. Make the Secret Sauce: In a small bowl, whisk together mayonnaise, ketchup, mustard, apple cider vinegar, smoked paprika, cayenne (if using), salt, and pepper. Taste and adjust seasoning as needed. Cover and refrigerate while you prep the burgers. This takes about 5 minutes.
  2. Prepare the Burger Patties: In a large bowl, combine ground beef, salt, pepper, garlic powder, and onion powder. Use your hands to gently mix—don’t overwork the meat or the burgers get tough. Divide into 4 equal portions (about 4 oz/115g each) and gently shape into patties about ¾ inch (2 cm) thick. Make a slight indentation in the center of each patty with your thumb to prevent puffing during cooking. This step usually takes 10 minutes.
  3. Preheat Your Grill or Pan: Heat your grill to medium-high or warm your cast-iron pan over medium-high heat. You want it hot enough to sizzle when the patties hit. This takes around 5 minutes.
  4. Cook the Burgers: Place patties on the grill or pan. Cook for about 3-4 minutes on the first side without moving them. Flip carefully using a spatula or tongs. Immediately add a slice of cheddar cheese on top of each patty. Cook for another 3-4 minutes for medium doneness (160°F/71°C internal temperature). Adjust time if you prefer more or less cooked. If you want to toast the buns on the grill, do it during the last minute of cooking. Total cooking time: about 8 minutes.
  5. Assemble the Burgers: Spread a generous spoonful of secret sauce on the bottom bun, layer lettuce, tomato, and onion slices, then add the cheesy patty. Top with pickles and more sauce if you like. Finish with the top bun.
  6. Serve Immediately: These burgers are best eaten fresh off the grill while the cheese is melty and the sauce is tangy and cool. Serve with your favorite sides and enjoy!

Notes

Do not over-mix the ground beef to keep patties tender. Make a thumb indentation in patties to prevent puffing. Let patties rest a few minutes after cooking to redistribute juices. Toast buns last minute for best texture. Use a spray bottle of water to control grill flare-ups. Secret sauce can be made ahead and refrigerated.
