  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. In a large bowl, sift together flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, beat sugar and eggs until light and fluffy, about 2 minutes. Slowly add oil and vanilla extract, mixing until incorporated.
  4. Gradually fold dry ingredients into wet ingredients using a rubber spatula, stirring gently to avoid overmixing.
  5. Stir in crushed pineapple, mashed bananas, and chopped nuts if using, mixing just until combined.
  6. Divide batter evenly between prepared pans and smooth tops. Tap pans gently to release air bubbles.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool cakes in pans for 10 minutes, then invert onto cooling racks to cool completely.
  9. For frosting, beat cream cheese and butter until creamy. Gradually add powdered sugar, vanilla, and salt, beating until light and spreadable.
  10. Assemble cake by placing one layer on a plate, spreading frosting on top, then adding second layer. Frost top and sides evenly. Use an offset spatula to create swirls if desired.
