  • 1/2 cup unsalted butter, softened
  • 1/4 cup real maple syrup
  • 2 tablespoons bourbon
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 cup chopped pecans
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Wash and dry sweet potatoes. Cut them in half lengthwise and brush cut sides with oil or melted butter.
  3. Place potatoes cut-side down on the baking sheet and roast for 45-60 minutes until tender and caramelized. Let cool for 10-15 minutes.
  4. Scoop the flesh from the skins into a large mixing bowl.
  5. Add softened butter, maple syrup, bourbon, heavy cream, vanilla extract, cinnamon, nutmeg, and salt to the bowl. Mash until smooth.
  6. In a small bowl, combine flour, brown sugar, and chopped pecans. Stir in melted butter until the mixture resembles coarse crumbs.
  7. Transfer the sweet potato mixture to a 9×13 inch baking dish and spread evenly.
  8. Sprinkle the streusel topping evenly over the sweet potatoes.
  9. Bake at 350°F (175°C) for 20-25 minutes until the topping is golden brown and the casserole is bubbly.
  10. Let cool for 5-10 minutes before serving.

Notes

Roasting the sweet potatoes concentrates their flavor and adds caramelization. Toasting the pecans beforehand enhances their nutty flavor. If making ahead, assemble the casserole and refrigerate; add 5-10 minutes to baking time if cold. For a gluten-free version, use a 1:1 gluten-free flour blend. For a dairy-free version, use vegan butter and coconut/oat cream.
