This classic meatloaf is incredibly moist and tender, topped with a sticky, sweet brown sugar glaze that caramelizes into a perfect crust. It’s a comforting, family-approved dinner made with simple pantry ingredients.

  • 2 lbs ground beef (80/20 is ideal for moisture; I prefer 85/15 if you want a bit less fat)
  • 1 cup plain breadcrumbs (panko works great for a lighter texture)
  • 1/2 cup whole milk (adds tenderness)
  • 1 medium yellow onion, finely grated (do not skip grating—it melts into the meat)
  • 2 large eggs, lightly beaten
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (adds a subtle, smoky depth)
  • 1/2 cup ketchup (I prefer Heinz for its balanced sweetness)
  • 1/3 cup packed light brown sugar
  • 1 tablespoon apple cider vinegar (cuts the sweetness)
  • 1 teaspoon yellow mustard (or Dijon, for a sharper kick)
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C). Line your loaf pan with parchment paper, leaving some overhang on the sides.
  2. In your large mixing bowl, combine the 1 cup of breadcrumbs with the 1/2 cup of milk. Let it sit for 5 minutes.
  3. While the breadcrumbs are soaking, heat a small pan over medium heat with a splash of oil. Sauté the grated onion and minced garlic for 2-3 minutes until they are fragrant and just starting to soften. Let them cool slightly.
  4. To the bowl with the soaked breadcrumbs, add the ground beef, sautéed onion and garlic, beaten eggs, Worcestershire sauce, salt, pepper, and smoked paprika. Use your hands to gently mix everything together. Do not overmix!
  5. Transfer the meat mixture to your prepared loaf pan. Press it in gently, making sure there are no air pockets. In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, mustard, and garlic powder for the glaze. Spread about half of the glaze evenly over the top of the meatloaf. Reserve the rest for later.
  6. Place the loaf pan on a baking sheet (to catch any drips) and bake for 45 minutes. After 45 minutes, carefully remove the pan from the oven and spread the remaining glaze over the top. Return it to the oven and bake for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C) in the center.
  7. Let the meatloaf rest in the pan for at least 10-15 minutes before slicing.

Notes

For a leaner option, use ground turkey or chicken and add an extra tablespoon of olive oil. If you don’t have a loaf pan, shape the meatloaf into a free-form loaf on a lined baking sheet. The resting time is crucial for moisture and structure.
