  • ½ cup unsalted butter, melted
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup brown sugar (for cinnamon swirl)
  • 1 teaspoon cinnamon (for cinnamon swirl)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or nonstick spray and lightly dust with flour.
  2. In a medium bowl, mash 3 ripe bananas with a fork until mostly smooth with a few lumps remaining.
  3. Add 1 cup packed light brown sugar, ½ cup melted unsalted butter (cooled slightly), 1 large room-temperature egg, and 1 teaspoon vanilla extract to the mashed bananas. Stir gently until combined.
  4. In a separate bowl, whisk together 1 ½ cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon salt, and 1 teaspoon ground cinnamon.
  5. Slowly fold the dry ingredients into the wet ingredients with a spatula just until combined, avoiding overmixing.
  6. In a small bowl, mix ¼ cup brown sugar with 1 teaspoon cinnamon for the cinnamon swirl.
  7. Pour half of the batter into the prepared pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter. Pour the remaining batter on top, then sprinkle the rest of the cinnamon sugar. Gently swirl the cinnamon sugar through the batter with a butter knife.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Start checking at 50 minutes.
  9. Let the banana bread cool in the pan on a wire rack for 15 minutes before removing.

Notes

Do not overmix the batter to avoid dense bread. Use very ripe bananas for best sweetness and moisture. Tent with foil if bread browns too quickly. Let bread cool before slicing for best texture.
