  • 1 medium butternut squash (about 2–3 pounds), peeled and cubed
  • 2 medium apples (Honeycrisp or Fuji), peeled, cored, and diced
  • 1 large yellow onion, diced
  • 3–4 cloves garlic, minced
  • 1-inch piece fresh ginger, peeled and grated
  • 4 cups vegetable broth
  • 1/2 cup full-fat coconut milk
  • 1–2 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Pinch of cayenne pepper (optional)
  • 2–3 sprigs fresh thyme

Instructions

  1. Preheat oven to 400°F (200°C). Peel and cube butternut squash into 1-inch pieces. Toss with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway, until tender and caramelized.
  2. While squash roasts, heat remaining 1 tablespoon olive oil in a large Dutch oven over medium heat. Add diced onion and a pinch of salt; cook 5-7 minutes until soft and translucent.
  3. Add minced garlic and grated ginger; cook 1 minute until fragrant.
  4. Add diced apples and fresh thyme sprigs; cook 3-4 minutes until apples begin to soften.
  5. Add roasted squash and vegetable broth. Bring to a boil, then reduce heat and simmer 15 minutes.
  6. Remove thyme sprigs. Use an immersion blender to puree soup until smooth. (Alternatively, let cool slightly and blend in batches in a countertop blender.)
  7. Stir in coconut milk and 1 tablespoon maple syrup. Season with salt, pepper, and cayenne. Add more maple syrup if desired.
  8. Serve hot with desired toppings (e.g., coconut milk drizzle, toasted pumpkin seeds, fresh thyme).

Notes

Roasting the squash is key for flavor; can be done a day ahead. For a thinner soup, add extra broth or water. Soup keeps in fridge up to 5 days and freezes up to 3 months. Reheat gently on stovetop.
