Instructions

  1. Reduce the apple cider: Pour 1/2 cup apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer gently until reduced to about 3 tablespoons (12-15 minutes). Pour into a small bowl and let cool completely.
  2. Cream the butter and cream cheese: In a large mixing bowl, beat softened butter and cream cheese on medium speed until smooth and well-combined (about 2 minutes). Add granulated sugar and brown sugar, then beat on medium-high for 3-4 minutes until light, fluffy, and pale. Scrape down sides halfway through.
  3. Add the wet ingredients: Add egg, vanilla extract, and cooled reduced cider. Beat on medium speed until fully incorporated (about 1 minute). The mixture may look slightly curdled.
  4. Combine the dry ingredients: In a separate medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
