A slow-cooked comfort food soup featuring tender chicken, chewy wild rice, and aromatic vegetables in a rich, creamy broth. Perfect for cold evenings and busy weeknights.

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 4 cups low-sodium chicken broth
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, diced
  • 3 medium carrots, peeled and sliced into half-moons
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • 1 cup uncooked wild rice blend
  • 1 bay leaf
  • ½ cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prep the vegetables by dicing the onion, slicing the carrots, chopping the celery, and mincing the garlic.
  2. Sauté the onion, carrots, and celery in butter for about 5 minutes until softened. Add garlic, thyme, and dried parsley in the last minute.
  3. Transfer sautéed vegetables to a 6-quart slow cooker. Add raw chicken pieces on top.
  4. Pour in chicken broth and sprinkle with salt and pepper.
  5. Stir in wild rice and bay leaf, ensuring rice is submerged in liquid.
  6. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until chicken is cooked through and rice is tender.
  7. Remove chicken from pot and shred into bite-sized pieces using two forks.
  8. Return shredded chicken to the pot (or keep separate) and stir in heavy cream.
  9. Taste and adjust seasoning with more salt or pepper if needed.
  10. Ladle into bowls, garnish with fresh parsley and black pepper, and serve with crusty bread.

Notes

If the soup is too thick, add a splash of broth or water. If too thin, cook uncovered for the last 30 minutes. For freezing, omit the cream before freezing and add fresh cream upon reheating. Chicken thighs are preferred for juiciness, but breasts work if not overcooked.
