This cozy maple apple crisp with oat streusel is a simple, forgiving fall dessert that feels like a hug in a bowl. Made with real maple syrup, tender apples, and a crunchy oat topping, it comes together in minutes and is perfect for any autumn occasion.

  • 4 medium Honeycrisp or Granny Smith apples (about 4–5 cups sliced)
  • 1/3 cup pure maple syrup (plus 1 tablespoon for drizzling)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup rolled oats (old-fashioned)
  • 1/2 cup all-purpose flour
  • 1/3 cup packed brown sugar (light or dark)
  • 5 tablespoons unsalted butter, cold and cubed
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Position a rack in the center.
  2. Peel, core, and slice the apples into 1/4-inch thick slices. You should have about 4 to 5 cups.
  3. In a medium bowl, toss the sliced apples with 1/3 cup maple syrup, lemon juice, cornstarch, cinnamon, nutmeg, and salt. Let sit for 5 minutes.
  4. In a separate bowl, combine rolled oats, flour, and brown sugar. Add cold butter cubes and cut in with a pastry cutter or your fingers until the mixture resembles coarse sand with some pea-sized butter pieces. Stir in chopped nuts if using.
  5. Pour the apple mixture into a greased 8×8-inch baking dish and spread evenly. Sprinkle the streusel over the top without pressing down. Drizzle 1 tablespoon of maple syrup over the streusel.
  6. Place the dish on a baking sheet and bake for 35 to 40 minutes, until the filling is bubbly and the streusel is deep golden brown. If browning too quickly, tent with foil after 30 minutes.
  7. Let cool on a wire rack for at least 10 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

For a gluten-free version, use a 1:1 gluten-free baking flour. For dairy-free, use cold coconut oil or plant-based butter. If apples are very juicy, add an extra teaspoon of cornstarch. Let the crisp rest for 10 minutes before serving to allow the filling to set.
