These cozy mini soft pretzel bites have a perfect chewy softness inside with a lightly crisp, golden crust, paired with a creamy, tangy cheesy dipping sauce that’s easy to make and delicious.

  • 3 cups (360g) all-purpose flour
  • 2 ¼ teaspoons (1 packet) instant yeast
  • 1 ¼ cups (300ml) warm water (about 110°F / 43°C)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • ¼ cup (60g) baking soda
  • Coarse sea salt, for sprinkling
  • 1 cup shredded sharp cheddar cheese (about 110g)
  • 4 ounces (113g) cream cheese, softened
  • ½ cup (120ml) milk (whole or 2%)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Stir lightly and let sit for 5 minutes until foamy.
  2. Stir in flour and salt. Mix with a wooden spoon or dough hook until dough starts coming together. Add melted butter and knead for 5-7 minutes until smooth and elastic. Add more flour if dough is too sticky.
  3. Cover bowl loosely with a kitchen towel and let dough rise in a warm spot for 45-60 minutes until doubled in size.
  4. Preheat oven to 450°F (230°C). Bring a large pot of water to a rolling boil and add baking soda.
  5. Punch down the risen dough and roll onto a lightly floured surface into a 1-inch thick rope. Cut into 1-inch pieces (about 40 bites).
  6. Boil dough pieces in baking soda water in batches for 30 seconds until they puff and float. Remove with a slotted spoon and place on parchment-lined baking sheet.
  7. Sprinkle bites with coarse sea salt and bake for 12-15 minutes until golden and slightly crisp, checking closely after 10 minutes.
  8. While baking, whisk together cream cheese, shredded cheddar, milk, Dijon mustard, garlic powder, salt, and pepper in a small saucepan over low heat until smooth and melted, about 5 minutes. Keep warm.
  9. Serve pretzel bites warm with cheesy dipping sauce.

Notes

Do not skip the baking soda boiling step to get the authentic pretzel crust. Watch baking time closely to avoid burning. Use freshly shredded cheese for best melting. The sauce can be kept warm on low heat and thinned with milk if too thick. Dough can be refrigerated shaped for up to 24 hours before boiling and baking.
