  • 1 whole pork tenderloin (1 to 1.5 pounds / 450 to 680 grams), trimmed of excess fat
  • 1/3 cup honey (113 grams)
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce (60 ml), low-sodium recommended
  • 2 tablespoons apple cider vinegar (30 ml)
  • 1 tablespoon Dijon mustard (15 grams)
  • 2 tablespoons olive oil (30 ml), for browning (optional but recommended)
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Trim and season the pork tenderloin by removing any silver skin or excess fat. Pat dry and season all sides lightly with black pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the pork tenderloin on all sides for about 2 minutes per side until golden brown. This step is optional but recommended.
  3. In a bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, Dijon mustard, and red pepper flakes if using.
  4. Place the seared pork tenderloin in the slow cooker and pour the honey garlic sauce evenly over the top.
  5. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the pork reaches an internal temperature of 145°F (63°C) and is tender.
  6. Remove the pork from the slow cooker and let it rest for 5 minutes before slicing.
  7. Optional: Pour the sauce from the slow cooker into a saucepan and simmer over medium heat for 5 minutes until slightly thickened. Spoon over the sliced pork.
  8. Garnish with chopped fresh parsley and serve with your favorite sides.

Notes

Searing the pork before slow cooking locks in juices and adds flavor but can be skipped if short on time. Check pork early if your slow cooker runs hot to avoid overcooking. Resting the pork after cooking keeps it juicy. Reducing the sauce after cooking enhances flavor and texture.
