  • 6 tablespoons unsalted butter, cold and cubed (85g)
  • 2/3 cup whole milk or buttermilk (160ml)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine sliced peaches, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, cornstarch, and a pinch of salt. Toss gently until peaches are evenly coated. Set aside to macerate for about 10 minutes.
  3. In a medium bowl, whisk together flour, baking powder, sugar, and salt.
  4. Using a pastry cutter or fork, cut in the cold butter cubes until the mixture resembles coarse crumbs with pea-sized pieces. Do not overwork.
  5. Gradually pour in the milk or buttermilk and stir just until the dough comes together. It will be slightly sticky but should hold shape when pressed.
  6. Pour the peach mixture into a greased 9×9 inch baking dish, spreading evenly.
  7. Drop spoonfuls of biscuit dough over the peaches, covering as much surface as possible but leaving some gaps.
  8. Bake for 35-40 minutes until peach juices bubble around the edges and the biscuit topping is golden brown. Tent with foil if topping browns too quickly.
  9. Let the cobbler rest for 10-15 minutes before serving to allow the filling to thicken and flavors to meld.
