Cozy White Bean and Kale Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 large garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
  • 6 cups chopped kale (about 1 bunch, tough stems removed)
  • 6 cups vegetable broth, low sodium preferred
  • 1 piece Parmesan rind (about 23 inches)
  • 2 teaspoons fresh thyme, finely chopped (or 1 teaspoon dried)
  • 1 bay leaf
  • Salt and freshly ground black pepper, to taste
  • Juice from half a lemon
  • Grated Parmesan cheese, for garnish (optional)

Instructions

  1. Prep the veggies: Wash and chop onion, carrots, celery, and garlic. Remove kale stems and chop leaves into bite-sized pieces.
  2. Heat olive oil over medium heat in a large pot. Add onion, carrots, and celery; cook, stirring occasionally, until softened and onion is translucent, about 5 to 7 minutes. Add garlic and cook for another minute until fragrant.
  3. Add drained white beans and vegetable broth to the pot. Toss in Parmesan rind, fresh thyme, and bay leaf. Stir to combine.
  4. Bring soup to a gentle boil, then reduce heat to low and simmer uncovered for 20 to 25 minutes until carrots are tender and flavors meld. Stir occasionally; add water or broth if needed.
  5. Stir in chopped kale and cook until wilted but still bright green, about 5 to 7 minutes. Season with salt and pepper to taste. Remove Parmesan rind and bay leaf before serving.
  6. Just before serving, squeeze fresh lemon juice into the soup and stir.
  7. Ladle soup into bowls and garnish with grated Parmesan cheese and a drizzle of olive oil if desired.

Notes

If soup is too thick, add hot water or broth to loosen. For creamier texture, blend half the soup with an immersion blender before adding kale. Save Parmesan rinds for soups to add deep umami flavor. Use fresh kale for best texture; frozen kale can be added earlier. Season gradually to control flavor. Leftover beans can be used if soaked and cooked properly. For vegan version, substitute Parmesan rind and cheese with vegan alternatives or nutritional yeast.
