Creamy Crockpot Beer Cheese Football Dip: Easy Game Day Recipe

This creamy, velvety beer cheese dip is made entirely in the slow cooker with simple ingredients like sharp cheddar, cream cheese, and your favorite lager. It’s the perfect set-it-and-forget-it appetizer for game day, tailgates, or any gathering.

  • 16 oz cream cheese, softened
  • 16 oz sharp cheddar cheese, freshly shredded
  • 12 oz beer (lager or ale)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper to taste
  • Optional garnishes: chopped fresh chives, crumbled cooked bacon, smoked paprika

Instructions

  1. About 30 minutes before starting, take cream cheese out of fridge to soften. Shred cheddar cheese. Measure out beer, Dijon mustard, garlic powder, onion powder, Worcestershire sauce, salt, and pepper.
  2. Cut softened cream cheese into 1-inch cubes.
  3. Place cubed cream cheese in the bottom of a 3-4 quart crockpot. Sprinkle shredded cheddar evenly on top. Do not stir.
  4. Pour beer over cheese mixture. Add Dijon mustard, Worcestershire sauce, garlic powder, onion powder, and a pinch of salt and pepper. Do not stir.
  5. Cover and cook on LOW for 1.5 to 2 hours. Do not cook on HIGH.
  6. After 1.5 hours, remove lid and stir with a rubber spatula until smooth and creamy. If too thick, stir in a splash of warm beer or milk.
  7. Switch crockpot to WARM setting for serving. Keep lid on between dips to prevent skin from forming.

Notes

Do not use pre-shredded cheese; shred your own for smooth melting. Always cook on LOW to prevent graininess. Use a beer you enjoy drinking; avoid dark stouts and hoppy IPAs. Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat gently on stovetop or microwave with a splash of warm beer or milk.
