A comforting, easy-to-make slow cooker casserole featuring tender long-grain rice, creamy cheese sauce, and broccoli florets. Perfect for busy weeknights and meal prep.

  • 1.5 cups long-grain white rice (uncooked)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth (low-sodium recommended)
  • 2 cups frozen broccoli florets
  • 1.5 cups sharp cheddar cheese (shredded)
  • 1/2 cup whole milk
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Rinse the uncooked long-grain white rice under cold water until the water runs clear to remove excess starch, then drain well.
  2. In a large mixing bowl, combine the rinsed rice, cream of chicken soup, chicken broth, milk, garlic powder, salt, and pepper. Stir thoroughly until smooth.
  3. Pour the rice mixture into a 4- to 6-quart slow cooker insert and spread evenly.
  4. Scatter the frozen broccoli florets over the top of the rice mixture. Do not stir them in yet.
  5. Cover and cook on LOW for 4 to 5 hours, or until the rice is tender.
  6. Once the rice is tender and liquid is absorbed, sprinkle the shredded cheddar cheese evenly over the top.
  7. Cover and cook on LOW for an additional 30 minutes to 1 hour, or until the cheese is melted.
  8. Remove the lid and stir gently to combine. Let the casserole sit for 5 minutes before serving to allow the sauce to thicken.
  9. Taste and adjust seasoning with salt and pepper if needed.

Notes

Do not use instant rice or brown rice as they will not cook correctly in this timeframe. For best results, shred your own cheese to avoid anti-caking agents. If the mixture is too dry, add a splash of milk or broth. If too wet, leave the lid off for 15 minutes to evaporate excess liquid. This recipe can be adapted to be gluten-free by using certified GF soup, or vegan by using plant-based alternatives.
