  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700 g)
  • ½ cup sun-dried tomatoes packed in oil, drained (about 75 g)
  • 1 cup chicken broth (240 ml)
  • ½ cup heavy cream (120 ml) (can substitute half-and-half or coconut cream for dairy-free)
  • ¼ cup grated Parmesan cheese (25 g)
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh basil or parsley, chopped (optional, for garnish)

Instructions

  1. Mince the garlic cloves and drain the sun-dried tomatoes if packed in oil. Chop them roughly.
  2. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add sun-dried tomatoes and cook for 2-3 minutes.
  3. Pat chicken breasts dry and season both sides with salt, black pepper, and Italian seasoning.
  4. Place the seasoned chicken breasts in a single layer at the bottom of the crockpot. Pour the sautéed garlic and sun-dried tomato mixture evenly over the chicken.
  5. Pour chicken broth around the chicken (not directly on top). Cover with the crockpot lid.
  6. Cook on low for 4-6 hours until chicken is tender and easily shredded with a fork.
  7. About 30 minutes before serving, remove chicken and set aside. Stir heavy cream and Parmesan cheese into the crockpot sauce. Cook on low with lid off for 15-20 minutes until sauce thickens.
  8. Return chicken to the crockpot to warm through for 5 minutes. Adjust seasoning if needed.
  9. Garnish with chopped fresh basil or parsley before serving.

Notes

Sautéing garlic and sun-dried tomatoes before adding to the crockpot enhances flavor. Cook on low to keep chicken tender. Add cream and cheese near the end to prevent curdling. If sauce is too thin, thicken with cornstarch slurry. Can substitute chicken thighs and adjust cooking time accordingly. For dairy-free, use coconut cream and nutritional yeast.
