  • 2 cups (475 ml) Greek yogurt (full-fat or 2%)
  • 23 tablespoons honey (or maple syrup for vegan option)
  • 1 teaspoon vanilla extract
  • 1 cup (150 grams) mixed berries (fresh or frozen; blueberries, raspberries, sliced strawberries)
  • 1/2 cup (50 grams) granola (nutty with oats and cinnamon preferred)
  • 1 tablespoon chia seeds (optional)
  • 1/4 cup (30 grams) chopped almonds or walnuts (optional)

Instructions

  1. Line a 9×13 inch (23×33 cm) baking sheet with parchment paper, smoothing out wrinkles.
  2. In a mixing bowl, combine Greek yogurt, honey, and vanilla extract. Stir gently until well blended.
  3. Pour the yogurt mixture onto the parchment-lined baking sheet and spread evenly to about 1/4 inch (6 mm) thickness.
  4. Evenly sprinkle mixed berries over the yogurt layer, followed by granola. If using, scatter chia seeds and chopped nuts. Press toppings lightly into the yogurt.
  5. Place the baking sheet flat in the freezer and freeze for at least 3 hours until firm.
  6. Remove the frozen bark from the freezer, lift it using the parchment paper edges, and break into pieces or cut into squares.
  7. Serve immediately or store in an airtight container in the freezer until ready to eat.

Notes

For thicker bark, strain excess liquid from yogurt before mixing. Use full-fat Greek yogurt for creamier texture. Press toppings gently to prevent falling off. Store in single layers separated by parchment paper to avoid clumping. Can be customized with different fruits, nuts, or dairy-free yogurts.
