A nostalgic and easy side dish made with Jiffy corn muffin mix, canned corn, and cheddar cheese. This creamy, savory casserole is perfect for holidays and weeknight dinners.

  • 1 can whole kernel corn, drained well
  • 1 can cream-style corn
  • 1/2 cup butter, melted and cooled slightly
  • 2 large eggs, room temperature
  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Drain the whole kernel corn thoroughly to remove excess liquid and place it in a large mixing bowl.
  3. Add the can of cream-style corn to the bowl and stir gently to combine.
  4. Pour the entire box of Jiffy corn muffin mix into the bowl. Stir until just combined; the mixture will look thick and clumpy.
  5. In a separate small bowl, whisk the eggs and melted butter together. Pour this mixture into the corn batter and stir until smooth.
  6. Fold in the shredded cheddar cheese with a spatula until streaks of cheese are distributed throughout.
  7. Pour the batter into the prepared baking dish and spread evenly.
  8. Bake for 45-50 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.
  9. Let cool for 5-10 minutes before cutting into squares and serving warm.

Notes

Ensure the corn is drained well to prevent a runny casserole. Let the melted butter cool slightly before adding to avoid cooking the eggs. For a spicy kick, add diced jalapeños. Can be made ahead by mixing batter and refrigerating overnight, adding 5-10 minutes to baking time.
