Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Peel sweet potatoes and cut into 1-2 inch chunks. Place in a large pot, cover with cold water by an inch, add a pinch of salt, and bring to a boil.
  3. Reduce heat to a simmer and cook for 15-20 minutes until fork-tender.
  4. Drain potatoes well and let them sit in a colander for 5 minutes to steam off excess water.
  5. Transfer hot potatoes to a large bowl. Add butter, heavy cream, maple syrup, vanilla, salt, and cinnamon.
  6. Whip the mixture using a food mill, potato masher, or hand mixer until completely smooth and creamy.
  7. While potatoes are whipping, toast pecan halves in a skillet over medium heat for 2-3 minutes until fragrant and slightly browned. Let cool and roughly chop if necessary.
  8. Spread the sweet potato mixture evenly into the prepared baking dish.
  9. Sprinkle toasted pecans over the top.
  10. Bake for 15-20 minutes until the top is lightly golden and edges are bubbly.
  11. Remove from oven and let cool for 5-10 minutes before serving.
