  • 2 tablespoons unsalted butter
  • 4–5 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil)
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • 2 cups fresh baby spinach
  • Salt and black pepper to taste

Instructions

  1. Prep ingredients: Shred chicken, chop sun-dried tomatoes, mince garlic, and grate parmesan cheese.
  2. Sauté aromatics: Melt butter in a large pot over medium heat. Add garlic and red pepper flakes, stirring for 30-60 seconds until fragrant but not brown.
  3. Add tomatoes: Toss in sun-dried tomatoes and sauté for 1 minute to release oils.
  4. Build sauce: Pour in chicken broth, scraping up browned bits. Simmer for 1 minute, then add heavy cream and stir. Bring to a gentle simmer.
  5. Simmer and season: Add Italian seasoning, salt, and pepper. Simmer gently for 2-3 minutes until the sauce coats the back of a spoon.
  6. Add chicken and spinach: Stir in shredded chicken and spinach. Cook until spinach wilts (about 1 minute) and chicken is heated through.
  7. Melt cheese: Remove from heat. Stir in parmesan cheese until melted and incorporated.
  8. Serve: Ladle into bowls and garnish with extra parmesan or black pepper. Serve with crusty bread.

Notes

Do not burn the garlic; keep heat at medium. Grate your own Parmesan to ensure smooth melting. If using dry-packed sun-dried tomatoes, soak them in warm water for 10 minutes first. The soup will thicken as it cools; add broth or cream when reheating. This soup does not freeze well due to the dairy content.
