  • 2 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons unsalted butter
  • 4–5 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 cups fresh baby spinach
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup freshly grated Parmesan cheese, divided
  • Salt and black pepper to taste

Instructions

  1. Pat chicken breasts dry and cut into 1-inch cubes. Season generously with salt and pepper.
  2. Heat a large pot or Dutch oven over medium-high heat. Add butter and melt until foaming.
  3. Sear chicken in a single layer (in batches if necessary) for 2-3 minutes until golden brown. Remove chicken and set aside.
  4. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the pot. Sauté for 1-2 minutes until fragrant.
  5. Pour in chicken broth to deglaze the pot, scraping up browned bits. Simmer for 1 minute.
  6. Stir in heavy cream and Italian seasoning. Bring to a gentle simmer (do not boil).
  7. Return chicken and any juices to the pot. Simmer gently for 3-4 minutes until chicken is cooked through (165°F).
  8. Stir in spinach and cook for 30-60 seconds until wilted.
  9. Remove from heat. Stir in half of the Parmesan cheese and red pepper flakes.
  10. Taste and adjust seasoning. Ladle into bowls and top with remaining Parmesan and fresh basil if desired.

Notes

Do not boil the cream after adding it to prevent separation. If the soup thickens too much upon cooling, thin it with a splash of broth or milk. For a vegetarian version, swap chicken for chickpeas or white beans. For a lighter version, use half-and-half or light coconut milk.
