Creamy One-Pot Mushroom and Thyme Chicken Thighs

A cozy and easy one-pot recipe featuring crispy chicken thighs simmered in a creamy mushroom and thyme sauce, perfect for weeknight dinners.

  • 6 bone-in, skin-on chicken thighs (about 1.5 lbs / 700g)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 12 oz (340g) cremini or white mushrooms, sliced
  • 3 garlic cloves, minced
  • 45 fresh thyme sprigs
  • 1 cup (240ml) low-sodium chicken broth
  • 3/4 cup (180ml) heavy cream
  • Salt and black pepper, to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Pat the chicken thighs dry with paper towels and season generously with salt and pepper on both sides.
  2. Heat olive oil and butter over medium heat in a large heavy-bottomed skillet.
  3. Place chicken thighs skin-side down and cook without moving for 7-8 minutes until skin is golden and crisp.
  4. Flip the chicken and cook the other side for 5 minutes, then transfer to a plate and set aside.
  5. Add sliced mushrooms to the pan and sauté for 6-7 minutes until they release liquid and start to brown.
  6. Add minced garlic and fresh thyme sprigs to the mushrooms and cook for 1 minute until fragrant.
  7. Pour in chicken broth, scraping up browned bits from the bottom, and simmer for 3 minutes to reduce slightly.
  8. Lower heat and stir in heavy cream. Return chicken thighs skin-side up to the pan, nestle into sauce, cover with lid, and simmer gently for 15 minutes.
  9. Remove lid and check chicken is cooked through (internal temperature 165°F / 74°C). If sauce is too thin, simmer uncovered a few minutes to thicken. Adjust seasoning with salt and pepper.
  10. Sprinkle fresh parsley over the top before serving.

Notes

Pat chicken dry for crispy skin. Cook chicken skin-side down without moving to develop a golden crust. Use fresh thyme for best flavor. Keep heat low when simmering cream to prevent curdling. If sauce is too thin, simmer uncovered to thicken. Can substitute heavy cream with coconut cream for dairy-free version. Use low-sodium broth to control saltiness.
