A quick and comforting creamy sausage and potato soup made in one pot in just 30 minutes. Perfect for busy weeknights, this hearty soup is packed with smoky sausage, tender Yukon Gold potatoes, and a velvety broth.

  • 1 lb smoked sausage (kielbasa or andouille), sliced into rounds
  • 1 medium yellow onion, diced
  • 3–4 cloves garlic, minced
  • 1.5 lbs Yukon Gold potatoes, diced into ½-inch cubes
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Brown the sausage: Place a large Dutch oven over medium-high heat. Add the sliced smoked sausage in a single layer. Cook for 4-5 minutes, stirring occasionally, until browned on all sides. Use a slotted spoon to transfer the sausage to a plate and set aside. Leave the rendered fat in the pot.
  2. Sauté the aromatics: Reduce heat to medium. Add the diced onion to the pot and cook for 4-5 minutes, stirring frequently, until soft and translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Bloom the spices: Sprinkle the dried thyme and smoked paprika over the onions and garlic. Stir constantly for about 30 seconds.
  4. Add the potatoes and broth: Add the diced potatoes to the pot. Pour in the chicken broth. Stir well, scraping up any browned bits from the bottom of the pot.
  5. Simmer the soup: Increase heat to high and bring to a boil. Reduce heat to low, cover, and simmer for 12-15 minutes until the potatoes are tender when pierced with a fork.
  6. Add the cream and sausage: Remove the pot from the heat. Stir in the heavy cream and return the browned sausage to the pot. Stir gently to combine.
  7. Season and serve: Taste and season with salt and black pepper as needed. Ladle into bowls, garnish with fresh parsley, and serve immediately.

Notes

For best results, use Yukon Gold potatoes and do not skip browning the sausage. Add cream off the heat to prevent curdling. Soup thickens as it sits; thin with extra broth when reheating. Freeze before adding cream for best texture.
