A simple, no-cook breakfast recipe where rolled oats are soaked overnight in almond milk with peanut butter and banana, resulting in a pudding-like, creamy texture that is perfect for meal prep.

  • 1/2 cup Old-Fashioned Rolled Oats
  • 3/4 cup Milk (almond, oat, or dairy)
  • 1 tablespoon Natural Peanut Butter
  • 1/2 Ripe Banana, sliced
  • 1 tablespoon Chia Seeds (optional)
  • 1 teaspoon Maple Syrup or Honey
  • 1/2 teaspoon Ground Cinnamon
  • Pinch of Salt

Instructions

  1. Prepare clean, dry mason jars or glass containers.
  2. Add rolled oats, chia seeds (if using), and cinnamon to each jar.
  3. Pour in milk, peanut butter, and maple syrup/honey.
  4. Vigorously stir the mixture to dissolve the peanut butter and combine wet and dry ingredients.
  5. Add sliced banana and gently stir to submerge.
  6. Seal jars tightly and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  7. In the morning, stir well. Top with remaining banana slices or granola.
  8. Serve cold or microwave for 60-90 seconds with a splash of milk if preferred warm.

Notes

Do not use quick oats or steel-cut oats as they will not achieve the desired texture. For best results, let the oats soak overnight to fully hydrate. If the mixture becomes too thick in the fridge, add a splash of milk before eating. Toasting the oats before soaking can add a nuttier flavor.
