  • 1 cup Milk of Choice (dairy, almond, oat, soy, or coconut)
  • 1 tablespoon Chia Seeds
  • 2 tablespoons Plain Greek Yogurt
  • 2 tablespoons Creamy Peanut Butter
  • 1 teaspoon Maple Syrup (optional)
  • 1/2 teaspoon Vanilla Extract
  • 1 pinch Salt
  • 1 medium Ripe Banana (sliced)
  • 1 teaspoon Extra Peanut Butter (for topping)
  • Granola (optional, for topping)

Instructions

  1. Wash and peel one banana. Slice it into thin rounds, using half for mixing and half for topping.
  2. In a large bowl or directly in mason jars, combine milk, Greek yogurt, maple syrup, vanilla extract, salt, and 2 tablespoons of peanut butter. Whisk or stir vigorously until the peanut butter is fully dissolved and the mixture is smooth.
  3. Add the rolled oats and chia seeds to the wet mixture. Stir until the oats are fully submerged and coated.
  4. Divide the mixture evenly among four 8-ounce jars. Press the sliced banana pieces into the oat mixture in each jar.
  5. Seal the jars with lids and place them in the refrigerator for at least 4 hours, but overnight (8-12 hours) is best.
  6. When ready to eat, remove jars from the fridge. Slice the remaining banana and arrange it on top. Drizzle with extra peanut butter if desired.
  7. Give it a gentle stir before eating to combine toppings with the base. Enjoy cold or let sit at room temperature for 10 minutes.

Notes

Use old-fashioned rolled oats, not instant or steel-cut, for the best texture. If the oats are too thick, add a splash more milk. If too thin, add a teaspoon of chia seeds. The recipe can be made vegan by using plant-based milk and yogurt, and gluten-free by using certified GF oats.
