  • 1/2 cup (50g) rolled oats (old-fashioned oats)
  • 1 medium ripe banana (about 100g mashed)
  • 2 tablespoons (32g) creamy peanut butter
  • 1/2 cup (120ml) milk (any kind)
  • 1/4 cup (60g) Greek yogurt (optional but recommended)
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 teaspoon (5ml) maple syrup or honey (optional)
  • 1 pinch salt
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. Mash the banana: In your jar or container, add the peeled banana. Use a fork to mash it until it’s mostly smooth with a few small chunks left.
  2. Add the wet ingredients: Add the peanut butter, milk, and Greek yogurt (if using) to the jar. If you’re adding maple syrup or vanilla extract, add them now. Stir everything together with your fork until the peanut butter is mostly incorporated.
  3. Add the dry ingredients: Pour in the rolled oats, chia seeds, and a tiny pinch of salt. Stir vigorously until everything is well combined. Make sure there are no dry oats at the bottom.
  4. Taste and adjust: Lick the spoon. If you want it sweeter, add a drizzle of maple syrup now. If you want more peanut butter flavor, add another half tablespoon.
  5. Seal and refrigerate: Put the lid on your jar and place it in the refrigerator. Let it sit for at least 6 hours, but overnight (8-12 hours) is ideal.
  6. Serve cold or warm: In the morning, take the jar out of the fridge. Give it a good stir. If it’s too thick, add a splash of milk to loosen it up. You can eat it cold or microwave it for 45-60 seconds if you prefer warm oats.
  7. Add toppings (optional): Slice a fresh banana on top, drizzle a little extra peanut butter, sprinkle some chopped peanuts or chocolate chips. A few berries on top add a tart contrast.

Notes

Use rolled oats for best texture; quick oats turn mushy. Mash banana well for even sweetness. Let sit at least 6 hours, ideally overnight. Stir before eating. For meal prep, leave toppings off until serving. Can be frozen for up to 3 months.
