  • 15 ounces (425g) canned pumpkin puree
  • 3 large eggs, room temperature
  • 1 to 1.5 teaspoons pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) heavy cream or half-and-half

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides, and grease lightly.
  2. In a medium bowl, combine graham cracker crumbs, 1/3 cup granulated sugar, and melted butter. Stir until it resembles wet sand.
  3. Press the crust mixture firmly and evenly into the bottom of the prepared pan. Pack it down tightly.
  4. Pre-bake the crust for 8 to 10 minutes. Remove from oven and let cool while preparing the filling.
  5. In a large bowl, whisk eggs until light and frothy. Add pumpkin puree, heavy cream, vanilla extract, pumpkin pie spice, cinnamon, and salt. Whisk vigorously until smooth.
  6. Pour the filling over the pre-baked crust and spread evenly. Tap the pan gently to release air bubbles.
  7. Bake for 30 to 35 minutes until edges are set and the center has a slight jiggle.
  8. Cool completely in the pan on a wire rack for at least 1 hour, then refrigerate for at least 2 hours or overnight.
  9. Lift bars out using the parchment sling, place on a cutting board, and cut into squares with a sharp knife.

Notes

Do not skip pre-baking the crust to prevent a soggy bottom. Ensure eggs and cream are at room temperature to prevent curdling. The bars must be chilled completely before cutting for clean slices. They can be frozen for up to 3 months.
