  • ½ teaspoon vanilla extract (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and cardamom.
  3. In a large bowl, beat softened butter and granulated sugar on medium-high speed for 3-4 minutes until pale and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Reduce mixer speed to low. Add dry ingredients in three additions, alternating with pumpkin puree. Start and end with flour. Mix until just combined.
  6. Pour batter into prepared dish and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cake cool in pan for 10 minutes (should still be warm).
  8. In a large bowl, whisk together evaporated milk, sweetened condensed milk, and heavy cream until smooth.
  9. Poke holes all over the surface of the warm cake with a fork or skewer. Pour milk mixture slowly and evenly over the cake.
  10. Cover and refrigerate for at least 4 hours, preferably overnight.
  11. Just before serving, whip cold heavy cream, powdered sugar, cinnamon, and vanilla until stiff peaks form.
  12. Spread cinnamon whipped cream over the chilled cake. Slice and serve.

Notes

Ensure pumpkin puree is thick, not watery. Room temperature ingredients are essential for proper creaming. Do not overmix the batter. The cake must chill overnight for best texture. Do not reheat; serve chilled.
