  • 1 (14 oz) can diced tomatoes with green chilies
  • 4 cups low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup frozen corn kernels
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • ½ cup plain Greek yogurt or sour cream
  • 1 ripe avocado
  • Juice of 1 lime
  • 2 tbsp fresh cilantro, chopped (optional)
  • Salt to taste (for avocado drizzle)
  • Crunchy tortilla strips or chips (for serving)
  • Shredded cheddar or Monterey Jack cheese (optional, for serving)
  • Fresh cilantro leaves (for serving)
  • Sliced jalapeños (optional, for serving)

Instructions

  1. Dice the onion, mince the garlic, and open the canned tomatoes. Trim and pat dry the chicken breasts or thighs.
  2. Add diced onion, minced garlic, diced tomatoes with green chilies, frozen corn, chicken broth, cumin, chili powder, smoked paprika, salt, and pepper into the slow cooker. Stir to mix spices.
  3. Nestle the chicken pieces into the soup base, pressing them slightly under the liquid so they’re covered but not shredded.
  4. Cover and cook on low for 4 to 5 hours, or on high for 2 to 3 hours until chicken is tender and fully cooked (165°F internal temperature). Avoid lifting the lid too often.
  5. Remove chicken pieces to a plate or cutting board and shred finely with two forks. Return shredded chicken to the slow cooker.
  6. Using an immersion blender, blend about half of the soup inside the slow cooker until smooth and creamy. Alternatively, blend half the soup in batches using a regular blender and return to pot.
  7. Gently stir in Greek yogurt until fully incorporated. Taste and adjust salt and pepper as needed.
  8. In a small bowl, mash the ripe avocado with lime juice, chopped cilantro, and a pinch of salt. Add a splash of water if a thinner drizzle is desired.
  9. Ladle soup into bowls, drizzle with avocado mixture, and top with crunchy tortilla strips, shredded cheese, and extra cilantro if desired. Serve warm.

Notes

If soup is too thick, add a splash of chicken broth or water before blending. Use chicken thighs for juicier meat. Make avocado drizzle fresh and keep refrigerated if storing leftovers. For dairy-free, substitute Greek yogurt with coconut yogurt or cashew cream and chicken with plant-based protein for vegan version. Avoid lifting slow cooker lid during cooking to maintain temperature.
