A quick and comforting way to use up Thanksgiving leftovers, this creamy turkey pot pie features a rich, silky sauce with tender turkey and vegetables, topped with a flaky crust and ready in under 20 minutes of active cooking.

  • 2 cups leftover turkey, shredded or diced
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 ½ cups chicken stock (low-sodium preferred)
  • ½ cup heavy cream
  • 1 cup diced carrots (fresh or frozen)
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • 1 sheet frozen pie crust, thawed

Instructions

  1. Preheat the oven to 400°F (200°C) and place a rack in the center.
  2. In a large skillet or Dutch oven, melt the butter over medium heat until it stops foaming.
  3. Sprinkle the flour into the melted butter and whisk constantly for 1-2 minutes to create a light golden roux.
  4. Slowly pour in the chicken stock while whisking vigorously to prevent lumps. Simmer for about 3 minutes until thickened.
  5. Stir in the dried thyme, garlic powder, onion powder, salt, and black pepper. Taste and adjust seasoning.
  6. Add the diced carrots and shredded turkey. Cook for 2-3 minutes until carrots begin to soften.
  7. Reduce heat to low and stir in the heavy cream and frozen peas. Cook for another minute until creamy.
  8. Pour the filling into a prepared baking dish or ramekins.
  9. Place the thawed pie crust over the filling, trim excess dough, crimp edges, and cut slits in the top for steam.
  10. Bake for 15-20 minutes until the crust is golden brown and the edges are bubbling.
  11. Let cool for 5 minutes before serving to allow the sauce to set.

Notes

Add frozen peas at the very end to prevent them from turning mushy. If the sauce is too thin, mix a teaspoon of cornstarch with cold water and stir it in during the last minute of stovetop cooking. Let the pie rest for 5 minutes before cutting to prevent the filling from spilling out. For a lighter version, substitute heavy cream with Greek yogurt added off the heat.
