Instructions

  1. Rinse and pat dry the pork tenderloin. Slice into 1-inch thick medallions. Season with salt, pepper, and smoked paprika if using. Let rest at room temperature for 10 minutes.
  2. Preheat the air fryer to 400°F (200°C) for 5 minutes.
  3. Lightly brush or toss the medallions in olive oil. Arrange in a single layer in the air fryer basket without overcrowding. Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through, until golden and internal temperature reaches 145°F (63°C).
  4. While pork cooks, combine honey, minced garlic, soy sauce, and apple cider vinegar in a small saucepan over medium heat. Stir until honey dissolves and mixture bubbles gently. Add cornstarch slurry and cook 1-2 minutes until thickened and glossy. Remove from heat.
  5. Toss cooked medallions gently in the warm honey garlic glaze until fully coated. Sprinkle with sesame seeds and chopped parsley or green onions if desired.
  6. Serve immediately with your favorite sides.

Do not overcrowd the air fryer basket to maintain crispiness; cook in batches if needed. Use a meat thermometer to ensure pork reaches 145°F for safe consumption.
