  • 12 medium-sized jalapeño peppers, halved lengthwise and seeded
  • 8 ounces cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder (optional)
  • ½ teaspoon smoked paprika
  • 12 thin to medium slices bacon
  • 2 tablespoons fresh parsley or chives, finely chopped
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice each jalapeño in half lengthwise and scoop out seeds and membranes to reduce heat. Leave some seeds if you prefer spicier poppers.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until smooth and evenly blended.
  4. Fill each jalapeño half generously with the cheese mixture using a spoon or small scoop.
  5. Wrap each filled jalapeño half with one slice of bacon, securing the ends underneath if needed.
  6. Place the bacon-wrapped poppers seam side down on the prepared baking sheet, spacing them evenly.
  7. Bake for 20-25 minutes until bacon is crisp and cheese filling is bubbly. Tent with foil if bacon crisps too quickly.
  8. Let poppers cool for 5 minutes before garnishing with chopped parsley or chives and serving.

Notes

Use gloves or wash hands thoroughly after handling jalapeños to avoid irritation. Check poppers at 18 minutes to prevent burning. For crispier bacon, use thinner slices or a wire rack. You can prepare poppers ahead and refrigerate before baking. Reheat in oven to keep bacon crispy.
