  • 1 teaspoon salt (for drawing out moisture from the zucchini)
  • 1 large egg (lightly beaten)
  • 1/4 cup all-purpose flour (or gluten-free flour blend)
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1/4 cup chopped fresh dill (or 1 tablespoon dried dill)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 2 tablespoons olive oil (for brushing)
  • 1 cup plain Greek yogurt (full-fat recommended)
  • 1 clove garlic (minced or pressed, for dip)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh mint or dill (for dip)
  • 1/4 teaspoon salt (for dip)
  • Pinch of black pepper (for dip)

Instructions

  1. Preheat your oven to 425°F (220°C). Place your baking sheet inside the oven while it preheats.
  2. Grate the zucchini using a box grater into a large bowl (about 3 to 4 cups).
  3. Sprinkle 1 teaspoon salt over the grated zucchini, toss to combine, and let sit for 5 minutes.
  4. Transfer the salted zucchini to a clean kitchen towel or cheesecloth. Gather the corners and twist tightly over the sink, squeezing out as much liquid as possible.
  5. In a large bowl, combine the squeezed zucchini, beaten egg, flour, grated Parmesan, minced garlic, chopped dill, black pepper, and onion powder. Stir until evenly distributed.
  6. Using your hands, form the mixture into 8 to 10 patties, about 2 inches in diameter and 1/2 inch thick.
  7. Carefully remove the hot baking sheet from the oven. Line it with parchment paper and brush lightly with olive oil. Place the fritters on the sheet, leaving space between each. Brush the tops with more olive oil.
  8. Bake for 10 minutes. The bottoms should be starting to turn golden.
  9. Carefully flip each fritter using a spatula. Return to the oven and bake for another 8 to 10 minutes, until both sides are golden brown and crispy.
  10. While the fritters bake, make the dip: In a small bowl, combine Greek yogurt, minced garlic, lemon juice, chopped mint or dill, salt, and pepper. Stir well and refrigerate until ready to serve.
  11. Let the fritters rest on the baking sheet for 2 minutes before transferring to a serving plate. Serve warm with the garlic yogurt dip on the side.

Notes

Squeeze zucchini thoroughly to remove moisture for crispy fritters. Preheat the baking sheet for a golden crust. Let fritters rest after baking to set. For air fryer: cook at 375°F for 8-10 minutes, flipping halfway.
