Instructions

  1. Pour 1 cup apple cider into a medium saucepan. Simmer over medium-low heat until reduced to 1/2 cup (about 15-20 minutes). Cool completely.
  2. Melt 1/2 cup unsalted butter in a saucepan over medium heat. Cook until foaming subsides and milk solids turn golden brown with a nutty aroma (3-5 minutes). Remove from heat and cool slightly.
  3. In a large bowl, whisk together 2 cups flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a separate bowl, whisk eggs and granulated sugar until pale. Add cooled reduced cider and browned butter; whisk to combine.
  5. Pour wet ingredients into dry ingredients. Gently fold with a spatula until just combined. Do not overmix.
  6. In a small bowl, mix 1/3 cup flour, 1/3 cup brown sugar, and 1 tsp cinnamon. Cut in 3 tbsp cold butter until coarse crumbs form.
  7. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with liners.
  8. Divide batter evenly among cups. Sprinkle streusel topping generously over each muffin.
  9. Bake for 18-22 minutes until a toothpick comes out clean and tops are golden brown.
  10. Cool in pan for 5 minutes, then transfer to a wire rack.

Notes

Ensure apple cider is reduced to a syrupy consistency to avoid soggy muffins. Brown butter carefully as it burns quickly. Do not overmix the batter to ensure tender muffins. Muffins taste even better the next day as flavors meld.
