  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons light brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon fine sea salt
  • Optional: pinch of cayenne pepper or smoked paprika

Instructions

  1. Preheat oven to 325°F (165°C).
  2. If using fresh seeds, rinse thoroughly to remove pulp and shake off excess water; do not dry completely.
  3. Melt the butter in a microwave-safe bowl or saucepan until liquid but not browned.
  4. In a large mixing bowl, toss the pumpkin seeds with the melted butter until lightly coated.
  5. Sprinkle brown sugar, cinnamon, and salt over the seeds and toss vigorously to create a paste-like coating.
  6. Line a baking sheet with parchment paper and spread the seeds in a single layer.
  7. Roast for 15 minutes, then remove and stir the seeds thoroughly.
  8. Return to oven and roast for another 10-15 minutes until golden brown and glossy.
  9. Remove from oven and let cool completely on the sheet for 10-15 minutes to harden.
  10. Store in an airtight container at room temperature.

Notes

Do not overcrowd the pan; roast in batches if necessary to ensure crispiness. The seeds will continue to crisp up as they cool, so remove them from the oven when they look slightly underdone. Store in an airtight container for up to 5 days.
