Ingredients

Scale
  • 2 cups cooked, shredded chicken (rotisserie or poached)
  • 8 oz cream cheese, softened to room temperature
  • 1 cup shredded cheddar cheese
  • 1/2 cup buffalo sauce (e.g., Frank’s RedHot)
  • 1/4 cup ranch dressing
  • 1/2 teaspoon garlic powder
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons butter, melted
  • 2 tablespoons grated parmesan cheese
  • 2 stalks green onions, thinly sliced

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a large mixing bowl, combine softened cream cheese, shredded chicken, buffalo sauce, ranch dressing, garlic powder, and shredded cheddar cheese. Mix until well combined and thick.
  3. Spread the chicken mixture evenly into the prepared baking dish and smooth the top.
  4. In a small bowl, mix melted butter, panko breadcrumbs, and grated parmesan cheese until breadcrumbs are evenly coated.
  5. Sprinkle the breadcrumb mixture evenly over the chicken base and press down lightly to adhere.
  6. Bake for 20-25 minutes until the cheese is bubbling and the topping is golden brown and crispy.
  7. Remove from oven and let cool for 5 minutes.
  8. Garnish with sliced green onions and serve warm with chips or vegetables.

Notes

Ensure cream cheese is softened to avoid lumps. Shred your own cheese for better melting. The dip can be made in a slow cooker on low for 2 hours, adding the topping in the last 15 minutes. Store leftovers in an airtight container for up to 3 days.
