A quick and flavorful weeknight meal featuring bell peppers stuffed with seasoned, baked chicken, topped with a creamy buffalo sauce, cheddar, and cream cheese.

  • 6 medium bell peppers (red, orange, yellow, or green)
  • 2 lbs cooked chicken (shredded breast or thighs)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 3 tbsp unsalted butter (melted)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 oz cream cheese (softened)
  • Ranch dressing (for serving)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a 9×13 inch baking dish with foil.
  2. Wash bell peppers, cut off tops, and remove seeds and membranes. Trim a small slice off the bottom if needed to help them stand upright.
  3. In a medium bowl, toss shredded chicken with garlic powder, onion powder, salt, and pepper until coated.
  4. In a small bowl or microwave-safe cup, melt butter and stir in buffalo hot sauce until smooth.
  5. Place peppers upright in the baking dish. Stuff each pepper with the seasoned chicken, packing it down slightly.
  6. Drizzle about 2 tablespoons of the buffalo sauce over the chicken in each pepper.
  7. Cut softened cream cheese into 6 squares and place one on top of the chicken in each pepper.
  8. Sprinkle shredded cheddar cheese over the cream cheese.
  9. Bake for 20-25 minutes until peppers are tender and cheese is bubbly and browned. Broil for 1-2 minutes if needed for extra browning.
  10. Remove from oven and let rest for 5 minutes before serving with ranch dressing on the side.

Notes

Use firm peppers with flat bottoms. Ensure cream cheese is softened to prevent rubbery chunks. Let peppers rest after baking to allow filling to set. For a dairy-free option, swap butter for olive oil and use vegan cheese alternatives.
