A simple, crunchy, and tangy snack made with just a few pantry staples. These roasted pumpkin seeds are seasoned with chili powder, garlic, and fresh lime for a perfect balance of heat and zest.

Ingredients

Scale
  • 2 cups raw pumpkin seeds (pepitas)
  • 2 tablespoons neutral oil (such as avocado or light olive oil)
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon coarse sea salt
  • Zest of 1 fresh lime
  • 1 tablespoon fresh lime juice
  • 0.25 teaspoon cayenne pepper (optional, for extra heat)

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. If using fresh pumpkin seeds, rinse them thoroughly to remove pulp and pat them completely dry with a towel. Let them air dry for 15 minutes if possible.
  3. In a small bowl, whisk together the chili powder, garlic powder, salt, and cayenne pepper (if using).
  4. Spread the pumpkin seeds onto a parchment-lined baking sheet. Drizzle with oil and toss until evenly coated.
  5. Grate the lime zest over the seeds and squeeze the lime juice on top. Toss again to distribute the seasoning.
  6. Roast in the preheated oven for 15-20 minutes, stirring every 5 minutes to ensure even browning.
  7. Remove from the oven and let the seeds cool completely on the pan. They will crisp up as they cool.
  8. Taste and adjust seasoning with extra salt or lime if desired before serving.

Notes

Ensure seeds are completely dry before roasting to achieve maximum crispiness. Do not refrigerate as they will absorb moisture and become chewy. Store in an airtight container at room temperature for up to a week. For a spicy version, add more cayenne; for a sweet version, swap chili powder for cinnamon and sugar.
